Fruit Dip and Vegetable Dip

If you're not sure you like fruits or vegetables try these dips and you'll become a fruit and vegetable lover!

1 container Fruit flavored yogurt - strawberry or lime are good
6 oz. Cool Whip
Defrost Cool Whip. Stir container of yogurt into Cool Whip. May garnish with lemon or lime zest, sliced strawberries or sliced kiwi fruit.
Yogurt flavors that work well are strawberry, lemon, lime, orange or raspberry.
Possible Fruits to Dip
apples, bananas, pineapple, watermelon, cantaloupe,
strawberries


Vegetable Dip

8 oz. Sour Cream
½ tsp. Bon Appetite Seasoning
½ tsp. Garlic Salt
½ tsp. Dill Seasoning
Mix ingredients together and refrigerate for at least l hour to blend flavors.
Possible Vegetable to Dip:
carrots, cucumbers, zucchini, green pepper, broccoli, cauliflower, small tomatoes

Quick Pizza

There's nothing better than pizza especially when you can make it fast and easy. This is a great recipe for when you have friends over or you just want a quick snack.

1 tube refrigerator biscuits
1 cup grated mozzarella cheese
¼ cup pizza sauce

Possible Toppings:

Pepperoni
Cooked sausage
Green pepper
Olives
Onion
Mushrooms

Heat oven to 400 degrees

Flatten or roll out individual biscuits to approximately 4 inches in diameter. Place on cookie sheet which has been greased or covered with foil or parchment paper. Spread pizza sauce on each biscuit and top with grated cheese. Place additional toppings on top of cheese as desired.

Bake for 8 to 10 minutes.

Cheesy Biscuits

These biscuits are to die for especially when they are warm and the cheese is melted and the garlic butter is filling the air with that delicious aroma.

1 ¾ cup flour
2 ½ teas. Baking powder
¾ teas. Salt
1/3 cup shortening
½ cup grated cheddar cheese
¾ cup milk

2 Tbsp. margarine, melted
1/8 tsp. garlic powder

Heat oven to 450 degrees.
Sift dry ingredients into a mixing bowl. Cut shortening into the flour mixture until the size of peas. Add cheese and mix well. Add milk and mix only until the flour is moistened. Form mixture into a ball and place it on a lightly floured counter. Knead lightly 8 to 10 times. Roll dough out until 1 inch thick. Cut biscuits with biscuit cutter. Place on ungreased baking sheet. Bake 10 to 12 minutes.
Mix melted margarine and garlic powder. Brush the tops of the biscuits with butter mixture as soon as they are taken from the oven.

Buttermilk Pancakes

Do you like light fluffy pancakes? Then my grandmother's recipe is just perfect!

Small Batch
1 egg
1 1/4 cup buttermilk
2 Tbsp. oil
1 cup flour, unsifted
1 Tbsp. sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. tsp. salt

Stir eggs until well mixed. Add buttermilk and oil. Mix well. Mix flour, sugar, baking powder, soda and salt together. Add to egg mixture and stir just until mixed. Mixture will be slightly lumpy. Place small amount of margarine on griddle or in frying pan. When margarine is melted, drop small amounts of batter in pan and cook until bubbly. Turn pancakes over and cook until done.

Seven Layer Dip

This is a yummy recipe for chips and dip. The mix of flavors is just right. ENJOY!

1 can refried beans, 16 oz.
1/4 cup salsa
2 cups sour cream
1 pkg. taco seasoning
1 cup grated cheddar cheese
1 tomato
2-3 green onions
4 Tbsp. olives

Optional:
2 avocodo
1 Tbsp. lemon juice
2 Tbsp. salsa

Tortilla chips

Mix refried beans and salsa together. Spread on serving plate. If using optional avocado layer mash avocado then add lemon juice and salsa. Spread on top of bean mixture. Mix sour cream and taco seasoning. Carefully spread sour cream mixture on top of bean mixture/avocado mixture. Sprinkle cheese evenly over sour cream mixture. Sprinkle tomatoes, green onions, and olives over cheese layer.

French Apple Dessert

Nothing says Fall like apple dessert!

1 can apple pie filling (21 oz.)
1/4 tsp. Cinnamon
1/4 tsp. Nutmeg

Topping
1 cup Bisquick baking mix
1/2 cup chopped nuts
1/3 cup brown sugar
3 Tbsp. margarine

Place apple pie filling, cinnamon, and nutmeg in a 9 x 9 pan. Mix well.

Topping

Mix Bisquick, nuts and brown sugar. Cut-in margarine until mixture is crumbly. Sprinkle on top of apple mixture.

Bake at 375 degrees for 20 minutes.

To cook in microwave place in round glass pan. Cover with plastic wrap folding over one edge to vent. Cook for 8 to 10 minutes on full power.
I can't believe that it has been so long since I made a posting. Time flies when your having fun! We have been busy reviewing the basics of cooking and trying new recipes. so far the students have LOVED what we have made. Look for the recipes on the side bar according to the class.
